Recipes

I know it's been awhile... but have you heard how BUSY it is around here? If you haven't heard then well BUSY doesn't even begin to cover it! I've added to my list though. To make it worse though this time of year I get in this mood to want to try new recipes. Last year I made sweet potato rolls, cookies, homemade chicken and dumplings among other things. The first on my list this year... spaghetti squash! I'm also on the hunt for a good pumpkin cheesecake recipe. So the reason for this post? To ask you to give me your favorite recipes so I can try them and hopefully add them to my list. Thanks in advance!

I'm just now getting to this! Here's one of my favorite recipes. It's getting cold out so potato and leek soup is great for winter.

Ingredients
3 Leeks (you only use the bottom part and you have to slice and wash them really, really, well)
5 potatoes (peeled and sliced)
1 diced red onion
4 tablespoons of olive oil
3 cloves of garlic
32 oz. of chicken or vegetable stock
Sour Cream (optional)
Salt and Pepper to taste

You'll need a really big pot (something like a dutch oven) and an immersion (or regular) blender.

Chop the garlic gloves and onions and begin sauteeing them in the olive oil in the pot. While you're doing that, peel and slice the potatoes, and cut and rinse the leeks. When you finish that, the garlic and onions should be sauteed enough. Add to that the potatoes, leeks, and the vegetable or chicken stock. Let everything simmer until the potatoes are really soft. Then just blend until smooth, add salt and pepper, and top with a spoonful of sour cream (or creme fraiche). It goes well with rolls or some kind of bread. Hope you like it!
